Such a go-to meal for me that is ultra filling and nutritious!
For the chicken:
Take your chicken breast and place it in the oven for 45 minutes on 365. Wrap the top of it in aluminum foil to prevent it from drying out. I added cilantro (love, love, love this herb) to the top of the chicken when it was almost done.
Roasted veggies on the side:
I chopped up full carrots and zucchinis, sprayed a little olive oil and put them in the oven at 400 degrees for 30 minutes.
These two items are great to cook in batches and portion out for multiple meals at a time! Enjoy!
