Irresistible Turkey Nachos

I remember the days on the hunt for some really good nachos. Do you know how many calories are in nachos though? Most appetizer nachos well exceed 1000+ calories – imagine; that is just for one part of your meal!

So, on my journey to reinventing foods that I loved into a healthier version, I tackled on nachos. Let me tell you – they smell amazing, look better & taste divine. You will never want to go back to restaurant nachos after these! They are awesome – combining lean protein, whole foods and using blue tortilla chips as the basis will knock your socks off.

What you will need:
Ground Turkey
Cilantro
Black Beans
Corn
Mozzarella Cheese
Heirloom Tomatoes

I use my cast iron skillet for this showdown. Try to get the best ground turkey that you can afford – most often, I shoot for 97/3. After it cooks out, I add frozen corn, pink himalayan sea salt & tons of cilantro.

Next, I lay out a baking sheet and place a sheet of aluminum foil on top to make for easy cleaning. I place out the blue tortilla chips to a flat level to make sure they all get yummy toppings. Then, I spoon out the turkey mix over all of the chips and sprinkle mozzarella cheese over the top! I cut in half a bunch of heirloom tomatoes and topped the whole dish liberally with them.

At this point, I turn my oven’s broiler on and pop the nachos in the oven. About 5 minutes after that, I take them out, add a little bit of salsa verde over the top and bam! Amazingly delicious healthy turkey nachos to satisfy the most intense nacho cravings.
