Healthy Breakfast Nachos!

Yum, yum, yum! Ok, let’s get to this tasty meal that is bursting with protein, healthy carbs and loads of flavor!

1. Scramble up some eggs – I use four here but you can use more or less as well as alternatives, like eggbeaters.
2. While they are almost all done cooking, add in some salsa – I used a can of organic salsa from a local spot near me. How much you put is to your liking.
3. Add some cheese on the top after the salsa and eggs are mixed together. I used low fat mozzarella but you can use any that you like, too.

Lastly, grab some organic blue corn chips (I go by the serving recommendation that is on the nutrition label as my baseline). Grab some of the scrambled eggs and place it on top of the blue chip. Next, consume.

Super delicious and healthy! Try them out and let me know what you think. You can also add other things into your egg scramble to give you that “nacho” sense like peppers, onions, sour cream, etc. just know that your macros will change but nonetheless, it is an ultra-charging breakfast for sure!
