Who doesn’t love some hearty chili?! What’s even better is that this protein packed powerhouse is full of flavor and nutrients and skips the traditional calories and fat that comes along with it.
The secret? Use ground turkey and pack it up with tons of veggies so when it cooks down the natural fiber of the veggies fills the chili out.
What you need:
1 package of lean ground turkey (I use 97/3)
1 package frozen corn
2 bell peppers (whatever colors you like)
2 cans of diced tomatoes (to the healthiest kind you can afford)
1/2 cup BBQ sauce – THIS IS THE “SECRET” – get the healthiest degree you can afford
2 cans black beans, rinsed (I used Goya)
The BBQ sauce is what gives it loads of flavor and minimizes sugar that you would typically add via brown sugar, sugar, potatoes, etc. to round out the savory flavors here. When it reduces down and gets into the turkey, it is amazing!
I throw all of this into my handy-dandy crockpot and let it cook on “slow” overnight. When I didn’t have a crockpot, I used my deep pan over the stove top on low heat overnight as well. From there, I portioned out at least 8 servings to spread across the course of the week. If you don’t want to eat the same food throughout the week, take whatever you don’t use and put it into the freezer for later.
